SAP is a corporate ERP, often the group standard in large organisations. Odoo and SAP are both full ERPs, so this is not a feature integration. It is a two-tier model.

The approach depends on the SAP product, since S/4HANA and older ECC expose data differently through OData services, BAPIs or IDoc messaging.
SAP to Odoo: master data such as the chart of accounts, cost centres, products and the group structure.
Odoo to SAP: financial postings, often summarised, plus the transaction data the group requires for consolidation.

Which SAP. S/4HANA, ECC and SAP Business One are different systems with different interfaces. The integration is specific to one.
Master data ownership. The group system usually owns master data, and Odoo must accept it rather than create its own.
Summarised versus detailed posting. Decide whether Odoo posts every transaction or summary journals to SAP.
Reconciliation discipline. Two ERPs must reconcile on a defined cycle.
Group governance. Corporate IT will have standards the integration must meet.
