Sage does accounting, capably. Odoo does accounting and a great deal more. So the question is not which does accounting better in isolation; it is whether a business needs accounting software, or needs a system that runs the whole operation.

When Sage fits

Sage fits a business whose software need genuinely is accounting, and whose other operations are simple enough to handle with light tools or are not software-heavy. For such a business, dedicated accounting software is genuinely sufficient, and there is nothing wrong with Sage for the business it fits.

When Odoo is the better choice

Odoo is the better choice for a business whose operation has grown beyond what accounting software plus spreadsheets can carry, with real inventory, manufacturing, sales, or projects to manage. For such a business, Odoo replaces accounting-plus-a-patchwork with one connected system where the accounting is joined to everything else. The reason to choose Odoo is not better accounting in isolation; it is connection across the whole operation.

The localization caveat

One honest caveat for either choice: accounting is intensely country-specific. Both Sage and Odoo serve particular countries with particular depth. A business should confirm that whichever it leans toward properly supports its country's accounting rules and reporting. For Odoo, this means checking the localization for the country.

The honest verdict

Sage is good accounting software, but it is not a full business system. A business genuinely needing only accounting may be right on Sage. A business that runs a real operation, inventory, manufacturing, sales, projects, that has outgrown a spreadsheet patchwork around its accounting, is the business for which Odoo, one connected system, is the right choice.
